Turkish Eggs with Greek Yoghurt
A quick, spicy, and creamy breakfast dish with eggs, tomatoes, spinach, and Greek yoghurt, served with crusty bread.

- 3 eggs
- 1 tomato, diced (seeds removed)
- handful of spinach
- fresh parsley, chopped
- 2-3 garlic cloves, minced
- butter
- 2-3 tablespoons Greek yoghurt
- pinch of sumac
- pinch of paprika
- salt
- pepper
- olive oil
- crusty bread (e.g., baguette)

Dice the tomato (remove seeds), chop parsley and garlic.

Heat olive oil in a frying pan over medium heat. Crack three eggs into the pan.

Add spinach, diced tomatoes, parsley, and garlic around the eggs. Add a knob of butter. Let it gently simmer for a few minutes.

Add a few spoons of Greek yoghurt, then season with sumac, paprika, salt, and pepper.

Serve directly from the pan with crusty bread to scoop up the eggs and sauce.
