Fried prawns with world sauce
Crispy panko-fried prawn skewers served with a creamy, tangy 'world sauce' made from Greek yogurt, crème fraîche, mayonnaise, horseradish, curry powder, and chili powder.
What goes in
- 12 large prawns (about 200 g), peeled and deveined
- 2 egg whites
- 100 g panko breadcrumbs
- 500 ml vegetable oil, for frying
- 1 tbsp Greek yogurt
- 1 tbsp crème fraîche
- 1 tbsp mayonnaise
- 1 tsp horseradish
- 1/2 tsp curry powder
- 1/4 tsp chili powder
- 1/2 lemon, juiced (optional, from video)
How to do it

Skewer each prawn lengthwise on a wooden stick.

In a small bowl, whisk the egg whites until slightly frothy.

Place the panko breadcrumbs in a shallow dish.

Dip each prawn skewer into the egg white, then coat evenly with panko breadcrumbs.

Heat the vegetable oil in a deep pot to 180°C (350°F).

Fry the breaded prawn skewers in the hot oil for about 2 minutes, until golden brown and cooked through.

Remove the prawns from the oil and drain on paper towels.

For the sauce: in a small bowl, combine the Greek yogurt, crème fraîche, and mayonnaise.

Add the horseradish, curry powder, and chili powder. Squeeze in lemon juice if using.

Mix everything together until smooth. Taste and adjust seasoning.

Serve the fried prawn skewers with the sauce on the side for dipping.
