Organic Goat Leg Stew
A slow-braised goat leg stew with balsamic vinegar, chicken broth, and fresh herbs, served over buttery mashed potatoes.

Season the goat leg with salt and pepper.

Heat olive oil in a pan over high heat and sear the goat leg on all sides until browned.

Remove the leg and set aside. In the same pan, sauté chopped carrots, onions, and garlic until softened.

Transfer the seared leg and sautéed vegetables to a Dutch oven. Add a splash of balsamic vinegar, chicken broth, and red wine.

Add fresh thyme and rosemary. Cover and simmer for about 6 hours until the meat is tender and falling off the bone.

For the sauce: In a separate pan, sauté chopped shallots in olive oil. Add some of the braising liquid from the Dutch oven and reduce for about 20 minutes.

For the mashed potatoes: Boil peeled and cubed potatoes until tender, drain, and mash with plenty of butter (no milk).

Remove the cooked goat leg from the pot, shred the meat with forks, and serve over mashed potatoes. Drizzle with the reduced sauce and garnish with rosemary.

For the sauce: I take some of the pan juices from the braised goat leg and reduce them down for about 20 minutes. I always start by sautéing some shallots before adding the juices to the pan. Reducing the sauce concentrates the flavors, making it richer and more intense—perfect for drizzling over the mashed potatoes. Did you know?
