Homemade Organic Chicken Curry Salad
A fresh homemade version of the classic chicken curry salad, featuring tender poached chicken, pineapple, and a homemade mayonnaise dressing with curry spices.

- 1 sprig rosemary
- 1/2 cup homemade mayonnaise (egg yolk, mustard, vinegar, lemon juice, olive oil)
- 1 tablespoon curry powder

- 1 teaspoon paprika
- 1/2 cup diced pineapple
- 2 tablespoons chopped chives
- 2 spring onions, chopped
- 1 tablespoon lemon juice
- 4 slices white sandwich bread
- Butter for toasting
- Lettuce for serving

Poach chicken breasts in chicken broth with a sprig of rosemary for 10-15 minutes until cooked through. Remove and shred.

Cut crusts off bread slices, stack and slice into thin strips, then toast until golden. Butter the toasted strips.

Peel and dice pineapple into small pieces. Chop spring onions and chives.
