Champagne Prawn Bisque
A luxurious bisque made with prawn heads, champagne, coconut milk, and fresh vegetables, blended for deep umami flavor.

Remove prawn heads and fry them in olive oil.

Add chopped tomatoes, bell pepper, jalapeños, onion, and garlic to the wok.

Pour in half a bottle of champagne (or white wine) and let it simmer for 30 minutes.

Blend the mixture (including the heads) until smooth.

Strain the blended sauce back into the wok.

Add half a spoon of fish sauce and about 5 spoons of coconut milk. Optionally add lemon juice.

Briefly cook the prawns in a separate pan.

Place cooked prawns on a plate, add fresh cilantro, and pour the bisque over the top.
