Maurice Style Mortadella Sandwich with Comté and Slow-Cooked Peppers
A slow-cooked sweet pointed pepper sandwich with mortadella and Comté cheese, finished with a squeeze of lemon.

- 1 sweet pointed pepper
- 1 clove garlic
- fresh thyme
- olive oil
- baguette (2 slices)
- mortadella (2 slices)
- Comté cheese (thin strips)
- lemon (for squeezing)

Halve the pointed pepper lengthwise, remove stem, seeds, and white membrane.

Pour olive oil into a frying pan over medium heat. Smash the garlic clove and add it to the pan along with the pepper halves.

Cook the peppers slowly in the olive oil with garlic and fresh thyme for about 20 minutes, turning halfway.

Toast two slices of baguette in the same pan, pressing them down with a book or weight.

Build the sandwich: layer mortadella, cooked peppers, and Comté cheese strips on one slice of bread. Repeat layers if desired.

Finish with a squeeze of lemon juice over the filling, then top with the second slice of bread and press gently.
