Pan-Seared & Stewed Lamb Chops
Quick-seared then gently simmered lamb chops in a rich tomato-onion-garlic sauce with rosé wine, perfect for dipping with fresh baguette.

- olive oil
- garlic cloves (whole)
- tomatoes (chopped)
- onions (chopped and wedges)
- rosé wine (or red wine)
- thyme or rosemary (optional)
- salt
- lemon (optional)
- red bell pepper (optional)
- fresh French baguette

Heat olive oil in a pan over high heat.

Sear the lamb chops for 1 minute per side.

Add whole garlic cloves, chopped tomatoes, and onions (chopped and wedges). Optionally add red bell pepper and lemon wedges.

Pour in rosé wine (or red wine). Squeeze lemon juice over if desired. Sprinkle salt.

Lower the heat and let it gently simmer for about 15 minutes. Add thyme or rosemary if using.

Serve in a dish and enjoy with fresh French baguette for dipping.

Pan-seared & gently stewed lamb chops, with that incredible cooking juice. How to make it? Heat olive oil in a pan. Sear the lamb chops on high heat - 1 minute per side. Then add: Garlic first (Whole garlic cloves -delicious once they turn soft and sweet for dipping) then tomatoes, onions, rosé (or red wine - I only had rosé). Lower the heat and let it gently simmer. Thyme or rosemary works beautifully here too. Serve in a nice dish. Don’t forget fresh French baguette for dipping.
