    Cut fresh tuna into small cubes and set aside.

    In a bowl, combine two egg yolks, smooth mustard, and grainy mustard. Stir well.

    Slowly add olive oil while stirring until the sauce thickens.

    Add capers, finely chopped pickles, chopped shallot, and lemon juice. Stir again.

    Add chopped spring onions and mix.

    Combine the sauce with the cubed tuna and mix well.

Two mustards -- smooth and grainy (a good spoon of each).
Stir.
Add olive oil until the sauce is still thick.
Capers (about two spoons).
A few finely chopped pickles.
One chopped shallot. And lemon!
Stir again.
Add chopped spring onions.

Mix the sauce with the tuna.
So good.
Serve on toast or grilled bread.
