Tuna Tartare with Killer Sauce
Fresh tuna tartare with a rich, tangy sauce made from egg yolks, mustards, capers, pickles, shallot, and lemon. Served on toast or grilled bread.

- 2 egg yolks
- 1 spoon smooth mustard
- 1 spoon grainy mustard
- olive oil, to thicken
- 2 spoons capers
- a few pickles, finely chopped
- 1 shallot, chopped
- lemon juice
- spring onions, chopped
- Tabasco sauce (optional)
- toast or grilled bread for serving

Cut fresh tuna into small cubes and set aside.

In a bowl, combine two egg yolks, smooth mustard, and grainy mustard. Stir well.
