Toasted Brioche with Prawns and Avocado

Hoe doe je het

    Toast brioche slices until golden.

  2. 02

    Heat olive oil in a frying pan over high heat. Add raw prawns and season with salt and pepper. Sear until cooked.

  3. 03

    Pour white wine into the pan with the prawns and let it reduce slightly. Collect the cooking juices by holding the pan over a steamer pot.

    Remove prawns from the pan and peel them, reserving the shells and meat separately.

  5. 05

    Return the prawn shells and heads to the pan. Add butter and more white wine. Stir in chopped shallot and cook.

    Add water, lemon zest, and fresh sage leaves. Pour in cream and stir to combine.

  7. 07

    Strain the sauce through a sieve into a measuring cup, discarding solids. Return the strained liquid to the pan.

  8. 08

    Add the peeled prawns back to the sauce. Stir in chopped spring onions and diced avocado.

  9. 09

    Place a toasted brioche round on a plate. Spoon the prawn mixture over the brioche. Serve immediately.
