Coq au Vin (Christmas-style)
A festive, organic Coq au Vin cooked straight from the pan, perfect for Christmas.

- chicken (drumsticks and thighs)
- pancetta or bacon
- mushrooms
- celery
- carrots
- red wine
- chicken stock
- lemon
- garlic cloves
- spring onions
- fresh parsley
Hoe doe je het
- 01
Brown the chicken and pancetta in a pan until golden.

Add mushrooms, celery, and carrots.
- 03
Pour in red wine and chicken stock until it almost covers everything.

Add a squeeze of lemon juice and whole garlic cloves.

Cover the pan with a lid (or wooden board) and simmer on low heat for about 1 hour 20 minutes.

In the last 5 minutes, add chopped spring onions and fresh parsley.

Serve straight from the pan.
