Organic Pointed Cabbage with Carrot-Leek Mousse

Roasted pointed cabbage on a bed of smooth carrot-leek mousse, finished with poppy seeds.

  • 1 onion
  • 1 clove garlic
  • Small piece of ginger
  • Splash of white wine
  • Splash of sherry
  • Cream
  • Butter
  • Salt & pepper
  • Poppy seeds
  • Olive oil

Hoe doe je het

    Preheat oven to 180°C.

  2. 02

    Cut the pointed cabbage in half or quarters. Drizzle with oil, salt, and pepper.

  3. 03

    Sear the cabbage in a hot pan with a little oil until lightly browned on the outside.

  4. 04

    Transfer cabbage to a baking dish and roast in the oven for 15 minutes until soft and lightly browned.

    Meanwhile, chop carrots, leek, onion, garlic, and ginger.

  6. 06

    Sauté everything in butter until soft.

  7. 07

    Add white wine and sherry. Let it reduce.

  8. 08

    Add cream and blend with an immersion blender until smooth. Season to taste.

    Plate the carrot-leek mousse first, then place the cabbage on top.

    Finish with poppy seeds and a drizzle of olive oil.

Method:

Cut the pointed cabbage in half or quarters. Drizzle with a bit of oil, salt, pepper. Sear the cabbage in a hot pan with a little oil until lightly browned on the outside.

Then roast in the oven at 180°C for 15 minutes until soft and lightly browned.

Meanwhile, chop carrots, leek, onion, garlic and ginger.

Add cream. Cream it up with a blender until smooth. Season to taste.

Plate the carrot–leek mousse first, add the cabbage on top.
