Organic Mussels with Ultimate Sauce

A simple yet flavorful dish of mussels cooked in white wine and vegetables, then served with a creamy blended sauce.

  • butter

Hoe doe je het

    Chop carrot, onion, leek, and coriander.

  2. 02

    Sauté the chopped vegetables in a bit of oil.

  3. 03

    Add a splash of white wine and let it simmer for about 4 minutes.

    Add the mussels and cook until they all open up.

  5. 05

    Drain the mussels, saving the cooking liquid.

  6. 06

    For the sauce, take some of the cooking liquid plus a few spoonfuls of the vegetables, add a few chunks of butter, and blend with a stick blender until smooth.

    Strain the sauce through a sieve.

  8. 08

    Pour the strained sauce over the mussels.

How to make it:

Chop up some carrot, onion, leek, and coriander. Sauté everything in a bit of oil, then add a splash of white wine and let it simmer for about 4 minutes.
Add the mussels and cook until they all open up.

Now drain the mussels but save the liquid. For the sauce, take some of that cooking liquid plus a few spoonfuls of the veggies, add a few chunks of butter, and blend with a stick blender until smooth. Strain it, pour it over the mussels… done!

So good - and perfect for dipping bread 😋
