Organic Mussels with Creamy Butter Sauce
Fresh mussels in a rich, creamy sauce made from sautéed vegetables, white wine, butter, and cream. Perfect for dipping bread.



Wat erin gaat
- 2 kg organic mussels
- 2 carrots
- 1 onion
- 1 leek
- 4 cloves garlic
- 1 bunch fresh coriander (cilantro)
- 2 tbsp olive oil
- 200 ml white wine
- 100 g butter
- 200 ml heavy cream
- 1 baguette (for serving)
Hoe doe je het

Chop carrots, onion, leek, garlic, and coriander into small pieces.

Sauté all chopped vegetables in olive oil in a large pan over medium heat for about 4 minutes.

Add a splash of white wine and let simmer for 4 minutes.

Add the mussels to the pan, cover, and cook until they open (about 5-7 minutes). Discard any unopened mussels.

Strain the mussels, reserving the cooking liquid. Set mussels aside.

Return some of the cooked vegetables to the reserved liquid, add butter, and blend with an immersion blender until smooth.

Add heavy cream and blend again. Strain the sauce through a fine-mesh sieve.

Pour the sauce over the mussels and serve with sliced baguette for dipping.

Pour it over the mussels and enjoy!
