Duck Breast with White Asparagus Rosé Gorgonzola Sauce
A rich but fresh dish with deep flavor and spring vibes!

- duck breast
- white asparagus
- onion
- garlic
- butter
- Provence rosé wine (3 glasses)
- salt
- pepper
- lemon
- Gorgonzola cheese (soft)
- olive oil
- cherry tomatoes (optional, from video)

Peel the white asparagus and cut them into chunks. Dice the onion and garlic.

Sauté the onion in butter, then add garlic, followed by the asparagus. Pour in three glasses of Provence rosé and let it simmer slowly.

Add salt, pepper, and a squeeze of lemon. Stir in a chunk of soft Gorgonzola and let it melt into the sauce.

Meanwhile, score the fat side of the duck breast in a diamond pattern. Slowly render the duck breast skin-side down in a pan for about 8 minutes. Flip and cook the other side for another 6 minutes. Let it rest for 5 minutes before slicing.

Serve the duck breast with the creamy asparagus sauce poured over.
