  • salt and pepper to taste
  • olive oil
  • fresh parsley
  • saffron (optional, from video)
  • lemon (for serving)

    Season chicken legs with salt and pepper. Brown them on both sides in olive oil in a pot. Remove and set aside.

    In the same pot, sauté chopped onion, garlic, tomatoes, and shelled fava beans for about 10 minutes.

    Add a splash of bouillon and a generous pour of rosé wine. Return the chicken to the pot.

    Add fresh parsley and optional saffron. Simmer gently for about 20 minutes.

    Stir in a spoonful of crème fraîche or cream. Season with salt and pepper to taste.

    Serve in a bowl, squeeze lemon over the top. Enjoy with crusty French baguette.

Bonjour from the South of France!

Today I’m cooking tender chicken legs in a Provençal sauce of rosé wine, French mustard, crème fraîche, and garden vegetables, straight from Antibes.

First, brown the chicken legs on both sides. Remove them from the pan.

In the same pan, sauté chopped onion, garlic, tomatoes, and fresh fava beans. Let it cook for about 10 minutes. Then add a splash of good bouillon and a generous pour of rosé.

Return the chicken to the pan and let it simmer gently for around 20 minutes.

Add salt and pepper to taste, and stir in a spoon of crème fraîche or cream just before serving.

Best enjoyed with crusty French baguette for dipping into that beautiful sauce.
