Soup de Poisson (French Fish Soup from a Can)

A quick and delicious French fish soup made from canned soup, served with homemade garlic croutons, quick rouille, and grated Emmental cheese.

  • 1 baguette, sliced
  • Olive oil
  • Fresh garlic, sliced or minced
  • Mustard mayo (or regular mayo + mustard)
  • 1 spoon strong mustard
  • Grated Emmental cheese
  • Splash of rosé wine (or red wine)
  • Dollop of crème fraîche or cream
  • Optional: banana (for garnish? appears in video but not in recipe)
  • Optional: leek (appears in video but not in recipe)
  • Optional: butter (added in video)
  • Salt and pepper to taste

    Slice baguette into rounds. Toast in a pan with olive oil and fresh garlic until crispy and golden.

    For the rouille: mix mustard mayo with a spoon of strong mustard and some fresh garlic. Set aside.

    In a bowl, layer croutons, a handful of grated Emmental cheese, and two big spoons of rouille.

    Heat the canned soup in a pot. Optionally, add a splash of wine (rosé preferred) and a dollop of crème fraîche or cream for extra richness. Stir and season with pepper.

    Pour the hot soup over the croutons, cheese, and rouille in the bowl.

    Serve immediately and enjoy.

Believe it or not: this soup comes straight from a can, but tastes like it’s served at a seaside restaurant in Corsica.

And of course, the classic way to enjoy it: 
✔️ Homemade garlic croutons 
✔️ A quick version of rouille (super easy, super tasty) 
✔️ Grated Emmental cheese 

How to prepare it: 
Slice some baguette, toast the slices in a pan with olive oil and fresh garlic until crispy and golden. 
For the rouille: mix mustard mayo with a spoon of strong mustard and some fresh garlic. Done!

In your bowl: 
Start with the croutons, add a handful of grated cheese, two big spoons of rouille… and pour the hot soup over it.

My personal twist: 
To boost the flavor even more, I add a splash of wine (rosé is best, but I used red because I was out of rosé) and a dollop of crème fraîche or cream. That makes the soup extra smooth and rich.

What is soup de poisson? 
It’s a traditional French fish soup, made from finely ground rockfish, slowly cooked with tomatoes, garlic, white wine, and herbs. Packed with deep umami flavor.
