Soup de Poisson (French Fish Soup from a Can)
A quick and delicious French fish soup made from canned soup, served with homemade garlic croutons, quick rouille, and grated Emmental cheese.

- 1 can Soup de Poisson Corse (or other French fish soup)
- 1 baguette, sliced
- Olive oil
- Fresh garlic, sliced or minced
- Mustard mayo (or regular mayo + mustard)
- 1 spoon strong mustard
- Grated Emmental cheese
- Splash of rosé wine (or red wine)
- Dollop of crème fraîche or cream
- Optional: banana (for garnish? appears in video but not in recipe)
- Optional: leek (appears in video but not in recipe)
- Optional: butter (added in video)
- Salt and pepper to taste

Slice baguette into rounds. Toast in a pan with olive oil and fresh garlic until crispy and golden.

For the rouille: mix mustard mayo with a spoon of strong mustard and some fresh garlic. Set aside.

In a bowl, layer croutons, a handful of grated Emmental cheese, and two big spoons of rouille.

Heat the canned soup in a pot. Optionally, add a splash of wine (rosé preferred) and a dollop of crème fraîche or cream for extra richness. Stir and season with pepper.

Pour the hot soup over the croutons, cheese, and rouille in the bowl.
