Open Omelet with Organic Goat Cheese, Spinach & Parmesan
Simple, quick, and absolutely delicious! Inspired by a Gordon Ramsay recipe, this open omelet is perfect for any meal.

- 4 eggs
- Organic goat cheese, to taste
- Fresh spinach, a large amount
- Parmesan cheese, grated
- Butter, a piece
- Olive oil
- Baguette, for serving

Whisk 4 eggs in a bowl.

In a small frying pan, melt butter over medium heat and sauté fresh spinach until wilted. Transfer to a bowl.

In another small frying pan, heat olive oil and pour in the whisked eggs. Stir gently with a fork until the eggs are about halfway set.

Crumble goat cheese on top of the eggs, add the sautéed spinach, and finish with grated Parmesan.

Place the pan under a hot grill (broiler) in the oven for about 6 minutes, until the cheese is melted and golden.

Remove from oven, slide the omelet onto a cutting board, slice, and serve with fresh baguette.
