Baked Vacherin Mont d'Or with Potatoes

    Preheat oven to 180°C (or 200°C as per caption).

    Slice the chili pepper lengthwise and remove seeds.

  3. 03

    Poke several holes into the top of the cheese rind with a fork.

    Crush and finely chop the garlic cloves.

    Cut fresh rosemary sprigs with scissors.

    Pour a splash of white wine over the poked cheese.

    Sprinkle chopped garlic over the cheese.

    Place the two halves of chili pepper on top of the cheese.

    Place two sprigs of rosemary on top of the cheese.

    Place small potatoes (some halved) in a pot, cover with water, and bring to a boil. Cook until tender.

    Bake the cheese in its wooden box in the preheated oven for 25 minutes.

    Remove cheese from oven using an oven mitt. Drain potatoes and serve with the melted cheese for dipping.
