Burgundy Snails with Garlic Herb Butter
A classic French appetizer featuring snails baked with a rich garlic herb butter made from six fresh herbs, served with crusty baguette.

- 24 snail shells with snails (canned or fresh)
- 200g semi-salted butter
- 6 cloves garlic, minced
- 2 shallots, finely diced
- fresh parsley, chopped
- fresh tarragon, chopped
- fresh mint, chopped
- fresh chervil, chopped
- fresh chives, chopped
- crusty baguette for serving

Preheat oven to 180°C.

Finely chop all fresh herbs (parsley, tarragon, mint, chervil, chives) and place in a bowl.

Finely dice shallots and mince garlic, add to the bowl with herbs.

Add semi-salted butter to the bowl and mix with your hands until well combined.

Knead the mixture into a ball, then divide into smaller portions.

Place a small amount of the herb butter into each snail shell.

Arrange the filled shells on snail plates.

Bake for 10 minutes until butter is melted and bubbling.
