Grilled sardines on toast with fried grated carrots
Fresh grilled sardines served on toasted bread, topped with sweet fried grated carrots, garlic, soy sauce, and parsley.
What goes in
- 6 sardine fillets (about 300 g)
- 2 slices of bread (sourdough or similar)
- 1 large carrot (about 150 g), grated
- 2 cloves garlic, grated
- 1 tbsp olive oil (for frying carrots)
- 1 tbsp olive oil (for drizzling on toast)
- 1/2 tbsp soy sauce
- Salt, to taste
- Fresh parsley, chopped (about 2 tbsp)
- Lemon wedge, for serving (optional)
How to do it

Grate the carrot and add it to a pan with olive oil. Fry on medium-low heat for about 15 minutes, stirring occasionally.

Add grated garlic and soy sauce to the carrots. Season with salt and cook for a few more minutes on low heat.

Grill the sardines skin-side first for about 2 minutes, then briefly on the other side.

Toast the bread slices and drizzle with olive oil.

Place the grilled sardines on the toast, top with the fried grated carrots, and finish with chopped parsley. Squeeze lemon juice over if desired.
