Chicken with homemade applesauce, fried potatoes & mayo
A Dutch comfort classic: pan-fried marinated chicken served with homemade applesauce, golden fried potatoes, and a generous dollop of mayonnaise.
What goes in
- 300 g chicken breast or thigh, cubed
- 2 sprigs fresh thyme
- 2 tbsp olive oil
- 1 tsp freshly ground black pepper
- 1 tsp salt
- 400 g potatoes, peeled
- 3 apples, peeled and sliced
- 100 ml water
- 1/2 lemon, juiced
- 2 tbsp sugar
- 30 g butter, divided
- 4 tbsp mayonnaise
How to do it
- 01
Peel and slice the apples, then place them in a stainless steel pot.

Pour water over the apples and squeeze in the lemon juice.

Peel the potatoes and boil them in salted water until tender, about 15-20 minutes.

In a bowl, marinate the chicken cubes with fresh thyme, olive oil, salt, and black pepper. Stir to coat.

Cook the apples over medium heat until soft, then mash into a smooth applesauce. Stir in sugar and a pat of butter. Taste and adjust.

Drain the boiled potatoes and transfer to a frying pan with a little butter or oil. Fry until golden brown and crispy.

Heat a frying pan over medium-high heat. Cook the marinated chicken pieces until browned and cooked through, about 6-8 minutes. Add a slice of butter and a squeeze of lemon juice while frying.

Plate the applesauce, fried potatoes, and chicken. Drizzle the pan juices over the chicken and applesauce.

Add a generous dollop of mayonnaise to the fried potatoes and serve.
