Creamy shiitake pasta
A quick and creamy shiitake mushroom pasta with shallot, garlic, celery, lemon, and Parmesan.
What goes in
- 200 g spaghetti
- 200 g shiitake mushrooms
- 1 shallot
- 2 cloves garlic
- 2 celery stalks
- 2 tbsp olive oil
- 30 g butter
- 100 ml heavy cream
- 0.5 lemon
- 50 g Parmesan cheese
- 2 tbsp fresh parsley
- 100 ml pasta water
- salt to taste
- black pepper to taste
How to do it

Halve the shiitake mushrooms and remove the stems.

Heat olive oil in a frying pan and briefly fry the mushrooms.

Add the chopped shallot and smashed garlic to the pan.

Grate the celery and toss it into the pan.

Add a knob of butter and let it simmer for about 10 minutes.

Meanwhile, cook the spaghetti in salted boiling water until al dente.

Pour in a splash of cream and squeeze in the juice of half a lemon.

Add a ladle of pasta water to the sauce and stir.

Transfer the cooked spaghetti to the pan and toss well with the sauce.

Plate the pasta and top with chopped parsley and grated Parmesan.
