Stuffed chicken breast with goat cheese, onion and prosciutto
Flattened chicken breast stuffed with goat cheese, onion and prosciutto, pan-seared and basted with thyme-garlic butter.
What goes in
- 2 chicken breasts (about 300 g total)
- 100 g goat cheese
- 1 white onion
- 60 g prosciutto
- 2 tbsp olive oil
- 30 g butter
- 4 sprigs fresh thyme
- 2 garlic cloves
- 4 quail eggs (optional, for serving)
- Salt and pepper to taste
How to do it
- 01
Flatten the chicken breasts using a tortilla press or a meat mallet until about 1 cm thick.

Cut the goat cheese into cubes and slice the onion.

On one half of each flattened chicken breast, layer the goat cheese, sliced onion, and prosciutto.

Fold the other half of the chicken over the filling to enclose it.

Heat olive oil in a frying pan over medium-high heat. Sear the stuffed chicken breasts on both sides until golden brown.

Add butter, fresh thyme sprigs, and garlic cloves to the pan. Baste the chicken with the melted butter.

Continue cooking until the chicken is cooked through and the filling is hot.

Transfer the chicken to a plate, spoon over the pan sauce, and serve with cooked quail eggs if desired.
