Sardine in tomato sauce with avocado and toast
A quick and tasty starter or party snack featuring canned sardines in tomato sauce served over avocado halves with a tangy mustard-egg sauce and toasted bread.
What goes in
- 1 can (about 120 g) sardines in tomato sauce
- 1 large ripe avocado
- 1 egg yolk
- 1 tsp Dijon mustard
- 1 small garlic clove
- 1 tbsp fresh curly parsley, chopped
- 1 tbsp olive oil
- 1 tsp fresh lemon juice
- 2 slices of bread (for toasting)
How to do it

Open the can of sardines in tomato sauce. Remove the sardines and set aside. Pour the tomato sauce from the can into a bowl.

Add olive oil, raw egg yolk, lemon juice, grated garlic, chopped parsley, and mustard to the tomato sauce. Whisk well until combined.

Cut the avocado in half and remove the pit. Scoop out one half (or use both halves) and place in a serving bowl.

Spoon some of the prepared sauce into the hollow of the avocado. Place a sardine on top and spoon more sauce over it.

Toast the bread slices. Serve the stuffed avocado with the toasted bread on the side. To eat, cut a piece of avocado and sardine and place it on a slice of toast.
