Garlic shrimp in white wine tomato sauce
A quick and flavorful shrimp dish with garlic, white wine, tomatoes, and coriander, perfect for dipping with baguette.
What goes in
- 300 g raw shrimp, peeled and deveined
- 3 tbsp olive oil
- 400 g canned chopped tomatoes
- 4 garlic cloves, peeled and crushed
- 150 ml white wine
- 1 lemon, sliced
- 1 boiled potato, sliced (optional, for thickening)
- 2 tbsp fresh coriander, chopped
- 1 French baguette, for serving
- Salt and pepper, to taste
How to do it

Heat olive oil in a large pan over medium heat. Briefly fry the shrimp until just pink, about 1-2 minutes per side. Remove shrimp from pan and set aside.

In the same pan, add the chopped tomatoes and cook for 2 minutes.

Add the crushed garlic and cook for 1 minute until fragrant.

Pour in the white wine and add lemon slices. Let simmer for about 10 minutes to reduce slightly.

If using, add slices of boiled potato to help thicken the sauce. Stir gently.

Return the shrimp to the pan and cook for about 1 minute until heated through.

Stir in chopped coriander. Season with salt and pepper to taste.

Serve hot with slices of French baguette for dipping.
