Brown beans with ground beef and potato puree
A hearty Dutch comfort dish of brown beans simmered with ground beef, cherry tomatoes, red onion, gherkins, and a touch of cream and mustard, served over creamy potato puree.
What goes in
- 300 g organic ground beef
- 1 tbsp olive oil
- 150 g cherry tomatoes
- 1 red onion, chopped
- 30 g butter
- 400 g canned brown beans, drained
- 2 cloves garlic, grated
- 3 gherkins, finely chopped
- 50 ml cream
- 1 tbsp mustard
- 500 g potatoes, peeled and boiled
- 50 ml milk (for puree)
- Salt and pepper to taste
How to do it

Heat olive oil in a frying pan and sear the ground beef briefly.

Add cherry tomatoes and chopped red onion to the pan.

Stir in a knob of butter, then add the brown beans and grated garlic.

Crush the cherry tomatoes with a spatula to release their juices.

Add finely chopped gherkins, a splash of cream, and a spoon of mustard. Stir to combine.

Simmer the mixture for about 20 minutes total.

Meanwhile, boil the potatoes until tender, then mash with milk, salt, and pepper to make a puree.

Plate a scoop of potato puree and top with the brown bean and beef mixture. Serve hot.
