Little gem lemon pasta
A super light, flavorful summer pasta with little gem lettuce, lemon, chili, garlic, and Parmesan. Less is more.
What goes in
- 200 g shell pasta
- 2 heads little gem lettuce
- 1 red fresh chili pepper
- 2 cloves garlic
- 3 tbsp olive oil
- 1 lemon
- 60 g Parmigiano Reggiano, grated
- 100 ml pasta water
- freshly ground black pepper to taste
How to do it
- 01
Finely chop the garlic and the red chili (deseed the chili first).

Bring a pot of salted water to a boil and cook the shell pasta until al dente. Reserve 100 ml pasta water.

Heat olive oil in a pan. Add the chili first, then the garlic. Cook gently without letting the garlic brown.

Add the pasta water and squeeze in the lemon juice.

Add the cooked pasta to the pan and toss.

Grate in the Parmesan cheese and toss to combine.

Slice the little gem lettuce and add to the pan. Cook for max 2 minutes, just until it wilts.

Plate and top with more grated Parmesan and freshly ground black pepper.
