Frozen watermelon cava aperol cocktail
A fun summer cocktail served straight from a frozen watermelon, filled with cava, Aperol, and fresh lemon.
What goes in
- 1 small whole watermelon (about 2 kg)
- 500 ml cava (or other dry sparkling wine)
- 100 ml Aperol
- 1 lemon, halved
How to do it
- 01
Before freezing, cut a small hole in the top of the watermelon where you will later pour in the drinks.

Freeze the whole watermelon for about 8 hours, or until rock solid.

Once frozen, pour the cava and Aperol into the hole, then squeeze in the juice of both lemon halves.

Use a spoon to scrape the frozen watermelon flesh from the inner walls, mixing it with the liquids. This helps the melon melt from the inside out.

Add a little extra cava if desired, and continue scraping until you have a slushy cocktail.

Serve straight from the watermelon in glasses or enjoy it directly from the melon with a spoon.
