White beans with grated zucchini and anchovies
A quick, savory dish of white beans simmered with grated zucchini, anchovies, and garlic, finished with lemon, parsley, and a touch of crème fraîche.
What goes in
- 2 tbsp olive oil
- 6 anchovy fillets (from a tin, in oil)
- 2 garlic cloves, chopped
- 1 medium zucchini (about 200 g), grated
- 400 g cooked white butter beans (canned, drained and rinsed)
- 1/2 lemon, juiced
- 2 tbsp fresh parsley, chopped
- 2 tbsp crème fraîche
How to do it

Heat olive oil in a pan over medium heat.

Add anchovies and chopped garlic; let them melt into the oil, stirring.

Add grated zucchini and cook for a few minutes until softened.

Add white beans and stir to warm through.

Squeeze in lemon juice, add chopped parsley, and stir in crème fraîche (not too much).

Taste and adjust seasoning if needed. Serve warm, garnished with a parsley sprig.
