White bean, tuna & anchovy salad on toast
A quick Mediterranean-style bean salad with tuna, red onion, parsley and anchovies, served on buttered toast.
What goes in
- 1 red onion
- 400 g canned white beans, drained and rinsed
- 160 g canned tuna in olive oil, drained
- 15 g fresh parsley, chopped
- 6 anchovy fillets in oil
- 1 lemon
- 3 tbsp extra virgin olive oil
- 2 slices of bread
- 20 g butter
- salt, to taste
- black pepper, to taste
How to do it
- 01
Peel the red onion and slice it into thin strips.

Drain and rinse the white beans, then transfer them to a large bowl.

Add the sliced red onion to the bowl.

Drain the tuna and add it to the bowl, flaking it gently.

Snip the fresh parsley directly into the bowl.

Finely chop 4 of the anchovy fillets and add them to the bowl.

Squeeze the juice of the lemon over the salad and drizzle with olive oil. Season with salt and pepper.

Toss everything together until well mixed.

Toast the bread and butter it generously.

Serve a portion of the bean salad on a plate, top with the buttered toast, and garnish with the remaining anchovy fillets.
