Tortilla Wrap with Chicken Thighs, Eggplant, Pointed Pepper & Greek Yogurt
A quick and flavorful tortilla wrap filled with seared chicken thighs, sautéed eggplant and pointed pepper, and a creamy Greek yogurt sauce.



Wat erin gaat
- chicken thighs
- chicken seasoning (or shawarma spices)
- eggplant
- pointed pepper
- tomato paste (1 tbsp)
- Greek yogurt (4 tbsp)
- fresh sage leaves
- garlic (grated)
- salt & pepper to taste
- iceberg lettuce
- tortilla wraps
Hoe doe je het

Quickly sear the chicken thighs over high heat and add chicken seasoning (or shawarma spices). Remove chicken from pan.

In the same pan, fry the diced eggplant and sliced pointed pepper.

Add the chicken back to the pan, then stir in 1 tablespoon of concentrated tomato paste, 4 tablespoons of Greek yogurt, some fresh sage leaves, grated garlic, and season with salt & pepper to taste.

Let it simmer gently for about 10 minutes.

Add iceberg lettuce to a tortilla, pile the chicken and vegetable mixture on top, and roll it up tightly.
