Burrata with Grilled Zucchini and Parmesan Croutons

A simple yet elegant dish featuring creamy burrata, thinly sliced grilled zucchini, and crispy Parmesan croutons, finished with good olive oil.

Hoe doe je het

    Slice the zucchini very thin using a peeler.

  2. 02

    Grill the zucchini slices briefly on both sides on a hot grill pan brushed with olive oil.

  3. 03

    Fry cubed old bread in olive oil in a pan, tossing constantly.

  4. 04

    Add grated Parmigiano Reggiano to the bread and let it melt around the bread for about a minute, tossing to coat.

    Place the burrata on a plate.

  6. 06

    Arrange the grilled zucchini on top of the burrata.

  7. 07

    Add the Parmesan croutons on the side.

    Finish with a drizzle of good olive oil and sprinkle dried oregano.

    Optionally, add anchovies and/or fresh basil.

How to make it?
Slice the zucchini super thin with a peeler and grill briefly on both sides. Fry old bread in olive oil, keep tossing, then add grated Parmigiano Reggiano and let it melt around the bread for about a minute. Serious croutons.

Place the burrata on a plate, add the grilled zucchini, croutons on the side and finish with good olive oil. Optional: anchovies and/or fresh basil.
