Cucumber, Lamb Sausage & Smoked Feta Salad with Cucumber Seed Vinaigrette

• 1 green cucumber
• 1 egg yolk
• 1 tablespoon good mustard
• red wine vinegar (to taste)
• Spanish anchovies (a few)
• olive oil (to emulsify)
• 1 red onion
• smoked feta (to taste)
• beautiful lamb sausage (sliced)
• cooking jus from the sausage (a little)

   Cut the cucumber in half lengthwise and scrape out the seeds into a metal bowl. Chop the remaining cucumber flesh into small pieces and transfer to a blue bowl.

   To the metal bowl with cucumber seeds, add egg yolk, mustard, red wine vinegar, and Spanish anchovies. Whisk together.

   Slowly drizzle in olive oil while whisking continuously to emulsify the vinaigrette.

   Chop the red onion and add to the blue bowl with the cucumber.

   Crumble smoked feta into the blue bowl.

   Slice the lamb sausage and cook in a small pan. Add the cooked sausage pieces to the blue bowl, along with a little of the cooking jus.

   Pour the vinaigrette over the salad and mix well.

   Transfer to a serving bowl and enjoy.
