Raw salmon with pak choi, radicchio and two sauces
A fresh, healthy dish of raw salmon served over pak choi and radicchio lettuce, dressed with a sesame-soy sauce and a creamy mustard-yogurt vinaigrette.
What goes in
- 300 g raw salmon fillet, sliced
- 2 heads pak choi, leaves separated
- 1 small head radicchio lettuce, leaves torn
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp sesame seeds
- 1 raw egg yolk
- 1 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- 100 ml olive oil
- 2 tbsp Dutch Greek yogurt
How to do it

Make the salmon sauce: mix 2 tablespoons soy sauce, 2 tablespoons sesame oil and 1 tablespoon sesame seeds. Stir well and place in the fridge while making the salad.

Make the salad dressing: whisk 1 raw egg yolk, 1 tablespoon white wine vinegar and 1 tablespoon mustard. Slowly add 100 ml olive oil while whisking until the sauce thickens slightly. Stop, then stir in 2 tablespoons Greek yogurt.

Arrange pak choi and radicchio on plates. Pour the dressing over the salad.

Place the raw salmon on top and drizzle with the chilled soy-sesame sauce. Enjoy!
