Pulled Pork Collar Sandwich with Beer Sauce
Low and slow pork collar braised in beer and vegetables, shredded, and served on a bun with a creamy sauce.

- 2 bottles blonde beer
- fresh thyme
- garlic
- mayonnaise
- soy sauce
- hamburger buns

Sear pork collar in hot oil in a red pot until browned on all sides.

Chop celery, onion, chili, and tomato.

Add chopped vegetables to the pot with the pork.

Cover the pot and place in oven at 120°C for at least 4 hours.

Remove pot from oven, take out pork, and shred with two forks.

Transfer cooked vegetables and liquid to a pan, add grated garlic, and mash.

Blend the mixture until smooth, then stir in mayonnaise and soy sauce.

Assemble sandwich: bun bottom, lamb's lettuce, shredded pork, sauce, bun top.
