Soy Egg Rice Noodles
Rice noodles stir-fried with hand-cut vegetables and a savory soy egg sauce, topped with a marinated soy egg.

Marinate eggs in a mixture of soy sauce, mirin, sesame oil, chili oil, and water for about 6 hours.

Heat oil in a wok. Add lots of chopped garlic and stir.

Add hand-cut carrots, chopped leek, sliced red onion, and finely chopped ginger. Stir-fry until tender.

Spoon some of the marinade from the soy eggs into the wok and stir.

Cook rice noodles in boiling water until done, then transfer to the wok.

Toss noodles with vegetables and sauce until well combined.

Serve in a bowl and top with a soy egg. Cut the egg in half and break the yolk before eating.

I let the eggs sit in it for about 6 hours - soy sauce, mirin, sesame oil, homemade chili oil and a bit of water. Then I use that same sauce for the noodles. Let everything soak in. Finish it with the soy egg on top.
