    Slice red tomatoes into rounds and arrange on a white plate.

    Scoop out avocado flesh and set aside.

  3. 03

    Smash and chop garlic cloves.

  4. 04

    Separate egg yolk into a tall measuring cup.

    Add wine vinegar and olive oil to the yolk, then blend with an immersion blender.

    Add avocado half and continue blending until green and thick.

  7. 07

    Add chopped garlic and a sardine, then blend again.

  8. 08

    Slice red onion into wedges and place on top of the tomatoes.

    Dollop the avocado-sardine mousse onto the tomatoes and onions.

    Top with capers, shaved Parmesan, a drizzle of olive oil, and black pepper.

    Serve portions on rice cakes.
