Marinated Raw Salmon with Miso Avocado Mousse
Fresh raw salmon marinated in a soy-wasabi-egg yolk sauce, served on crispy seared skin with a creamy miso avocado mousse.

Cut the salmon into cubes, separating the skin from one piece. Set the skin aside.

In a bowl, mix soy sauce, wasabi, juice from a yellow citrus fruit, and an egg yolk. Whisk until combined.

Pour the sauce over the salmon cubes and toss to coat. Let marinate.

In a tall glass, combine avocado flesh, olive oil, white miso paste, and juice from another yellow citrus fruit. Blend with an immersion blender until smooth and creamy.

Dip the reserved salmon skin into the remaining sauce, then place skin-side down in a hot pan. Sear until crispy, flipping to cook evenly.

Plate the crispy skin, spoon dollops of avocado mousse on and around it, and top with the marinated raw salmon cubes.
