Pork Tenderloin with Purslane Mash and Creamy Sauce

Tender pork tenderloin with a rich creamy sauce and a side of purslane mashed potatoes. Perfect for Easter.

  • Potatoes
  • Shallot
  • Red wine
  • Sherry
  • Butter
  • Cream
  • Mustard
  • Purslane
  • Black pepper

Hoe doe je het

    Place the pork tenderloin in a hot pan with oil and sprinkle with black pepper.

  2. 02

    Add a knob of butter and fresh thyme to the pan. Flip the meat to sear all sides.

  3. 03

    Boil chopped potatoes in a pot until tender.

  4. 04

    Once the pork is seared, wrap it in aluminum foil and set aside.

  5. 05

    In the same pan, sauté chopped shallot. Add a splash of red wine and a spoon of sherry. Let it reduce.

    Add a knob of butter and some cream to the pan to create the sauce. Stir in mustard to taste.

  7. 07

    Drain the boiled potatoes and add cream. Mash until smooth. Fold in purslane.

  8. 08

    Slice the pork tenderloin.

  9. 09

    Plate the mashed potatoes, top with sliced pork, and spoon the sauce over.
