Fresh Cod with Dried Chorizo Sauce & Avocado
A flavorful cod fillet served with a creamy chorizo sauce and fresh avocado, all organic and naturally prepared.

- dried chorizo, sliced
- shallot, sliced
- garlic cloves, hand-crushed
- white wine
- butter
- water (a splash)
- soy sauce (a splash)
- 2 egg yolks
- olive oil
- cod fillet
- avocado

Heat olive oil in a pan over medium heat. Add sliced dried chorizo and cook, stirring occasionally.

Add sliced shallot and hand-crushed garlic to the pan. Stir and cook until softened.

Pour in white wine and let it sizzle. Add butter, a splash of water, and a splash of soy sauce. Stir to combine.

Strain the mixture through a sieve into a bowl, separating the liquid from the solids. Reserve the liquid.

In a tall measuring cup, add two egg yolks. Pour the reserved liquid over the yolks. Add a small amount of olive oil.

Use an immersion blender to emulsify the mixture into a thick yellow sauce. Taste and adjust seasoning if needed.

In a clean pan, heat butter and oil. Place the cod fillet skin-side down and fry until skin is crispy. Flip and baste with the butter until cooked through.

Plate the cod. Top with a slice of avocado. Pour the chorizo sauce over the cod and avocado. Garnish with a few pieces of the cooked chorizo from earlier.
