Quick Homemade Limoncello
A quick 30-minute limoncello recipe that skips the long infusion but delivers fresh, light flavor with mint.

- 3 lemons (peel only)
- 300 ml vodka
- 200 ml water
- 150 g sugar
- Fresh mint

Peel 3 lemons, avoiding the white pith.

Combine lemon peels and 300 ml vodka in a small pot. Heat on low for 10 minutes, stirring occasionally.

In a separate pot, combine 200 ml water and 150 g sugar. Heat and stir until sugar dissolves to make simple syrup.

Strain the vodka mixture through a sieve into a measuring cup.

Add the simple syrup to the strained vodka and whisk to combine.

Place the mixture in the freezer for 30 minutes to chill.

Add fresh mint leaves to a glass, pour the chilled limoncello over the mint, add ice, and stir.

Serve and enjoy (but keep away from cats).
