Wasabi Mousse on Dutch Herring
A luxurious starter featuring creamy wasabi mousse over Dutch herring on toasted bread, topped with wakame and onion.



Wat erin gaat
- 100 ml cream
- 1 tablespoon wasabi
- Lemon juice (from a wedge)
- 3 spoons soy sauce
- Dutch herring fillet
- Wheat-corn bread
- Butter
- Wakame
- Raw onion rings
Hoe doe je het

Toast two slices of wheat-corn bread until golden.

In a measuring cup, whip 100 ml cream with 1 tablespoon wasabi until it thickens slightly.

Add lemon juice and 3 spoons of soy sauce, stir to combine.

Cut the toasted bread into rectangular pieces and spread butter on them.

Cut the herring fillet into pieces and place on the buttered toast.

Spoon the wasabi mousse over the herring.

Garnish with wakame and raw onion rings.

Add a dollop of sauce to the side of the plate and serve.
