  1. 01

    Sear chicken legs in a pan until browned, then remove and set aside.

    In the same pan, sauté hand-cut shallot and hand-crushed garlic.

  3. 03

    Add shiitake mushrooms and cook briefly.

  4. 04

    Return chicken legs to the pan.

    Add chicken stock, white miso, peanut butter, grated ginger, turmeric, and coconut milk. Stir to combine.

    Cover and simmer until chicken is cooked through.

  7. 07

    Add soy sauce and fish sauce to taste.

  8. 08

    Stir in a large amount of fresh spinach until wilted.

  9. 09

    Serve over cooked white rice.
