Organic Spaghetti with Olives, Anchovies, and Tomatoes
A simple yet flavorful organic spaghetti loaded with olives, anchovies, capers, and fresh herbs.

- black olives
- 4 anchovies
- 3 garlic cloves, smashed
- capers
- 1 fresh red chili
- 1 glass white wine
- 1 can peeled tomatoes
- 4 spoons fresh parsley
- 1 spoon pasta water
- spaghetti

Chop green and black olives together on a cutting board.

Add anchovies to the olives and chop everything together.

Heat olive oil in a pan over medium heat. Add smashed garlic cloves and cook until fragrant.

Add the chopped anchovies and olives to the pan. Stir and cook for a minute.

Remove the browned garlic cloves from the pan.

Pour in white wine and let it simmer, stirring occasionally.

Meanwhile, cook spaghetti in boiling salted water until al dente.

Add capers directly to the sauce.

Chop the fresh red chili and add it to the pan.

Add a spoonful of pasta water to the sauce.

Add the entire can of peeled tomatoes, crushing them with a fork. Stir and let simmer.

Roughly chop fresh parsley and sprinkle most of it into the sauce, reserving some for garnish.

Transfer the cooked spaghetti directly into the sauce pan. Toss well to combine.

Plate the pasta and garnish with remaining fresh parsley.
