Mountain Cheese Veggie Pan

A simple, healthy vegetable dish cooked on a snowboard in the Italian mountains, finished with mountain cheese.

  • olive oil
  • anchovies (a few)
  • aubergine (1, diced)
  • cherry tomatoes (a bunch)
  • Savoy cabbage (a few leaves)
  • snow (a handful)
  • lemon (juice of 1)
  • mountain cheese (to taste, grated)

Hoe doe je het

  1. 01

    Heat olive oil in a frying pan over a portable gas stove.

  2. 02

    Add anchovies and let them sizzle until they start to break down.

  3. 03

    Add diced aubergine and stir.

  4. 04

    Add cherry tomatoes and Savoy cabbage leaves.

  5. 05

    Add a handful of snow (or water) to create steam.

  6. 06

    Cook until vegetables are tender, stirring occasionally.

  7. 07

    Remove pan from heat and flip the contents dramatically.

  8. 08

    Squeeze lemon juice over the vegetables.

  9. 09

    Grate mountain cheese over the top and stir to melt.

  10. 10

    Serve in a bowl and enjoy.
