Slow-Cooked Organic Lamb Shank
A hearty slow-cooked lamb shank with vegetables and red wine, finished with green beans and rice.



Wat erin gaat
- 4 lamb shanks
- celery stalks
- orange carrots
- lamb back pieces
- bay leaves
- 1 onion
- 1 shallot
- fresh thyme
- garlic cloves
- 3 red tomatoes
- Chiroubles wine (organic)
- water
- green beans
- red chili flakes
- black pepper
- rice
Hoe doe je het
- 01
Place lamb shanks in a red pot and stir with a wooden spoon.

Grind black pepper over the lamb and flip with tongs.

Add celery stalks, orange carrots, lamb back pieces, bay leaves, onion, shallot, fresh thyme, garlic cloves, and whole red tomatoes.

Pour in Chiroubles wine and water, then cover with lid.

Slow cook for 3 hours (or while watching Netflix).

Remove lid, wipe condensation, and add green beans. Cover and cook for 20 minutes.

Remove cooked green beans and chop them. Sprinkle with red chili flakes.

Remove lamb pieces and set aside. Blend remaining pot contents with an immersion blender into a thick sauce, then strain through a fine-mesh strainer.

Pull meat off the bones and mix with chopped green beans.

Plate with rice, top with lamb and bean mixture, and spoon strained sauce over.
