Hangover Tuna Omelette
A quick and satisfying hangover breakfast with tuna, olives, sun-dried tomatoes, and fresh sage.



Wat erin gaat
- 1 can tuna in oil
- 2 eggs
- 1/2 white onion
- sun-dried tomatoes (a few)
- green olives (a handful)
- fresh sage leaves
- lemon (1/2)
- olive oil
- salt
- pepper

Chop the onion finely.

Heat olive oil in a frying pan over medium heat.

Add the chopped onion and sauté until translucent.

Open the can of tuna, drain the oil, and add the tuna to the pan. Break it apart with a wooden spoon.

Crack the eggs into the pan and scramble with a fork, mixing with the tuna and onions.

Season with salt and pepper.

Add sun-dried tomatoes and crushed olives. Stir to combine.

Squeeze lemon juice over the mixture.
