Organic Aubergine Ratatouille Sandwich
A delicious open-faced sandwich with slow-cooked ratatouille-style vegetables, homemade hummus, and a Parmesan crust, baked until golden.

- Hummus (store-bought or homemade)
- 1 lemon (juice)
- Parmesan cheese, grated
- Salt and pepper to taste
