Lamb Sausage Wrap with Fried Egg
A hearty wrap filled with spiced lamb sausage, pancetta, tomatoes, pickles, and a fried egg, all wrapped in a warm tortilla.



Wat erin gaat
- 1 organic wrap (tortilla)
- lamb sausages (casings removed)
- pancetta (a slice)
- tomatoes (sliced)
- white wine (a splash)
- fresh thyme
- pickles (chopped)
- lemon (juice of half)
- 2 eggs
- Parmesan cheese (grated)
- lettuce (2 kinds)
- rocket (arugula)
- raw onion rings
Hoe doe je het

Remove casings from lamb sausages and slice the meat. Slice pancetta.

Heat a pan over medium heat. Add pancetta and cook until fat renders. Add sausage meat and fry until browned, about 5 minutes.

Add sliced tomatoes, a splash of white wine, fresh thyme, and chopped pickles. Squeeze in lemon juice. Let simmer and reduce slightly.

Crack two eggs into the pan, keeping yolks whole. Sprinkle Parmesan on top. Cover with a lid or cutting board and cook until eggs are set to your liking.

Warm a tortilla in the oven or on a dry pan. Lay it on foil. Add lettuce, rocket, raw onion rings, and the cooked meat and egg mixture.

Wrap the tortilla tightly in foil. Cut in half and serve.
