Pan-Seared Salmon Sandwich with Crispy Skin

A comforting rainy-day sandwich featuring pan-seared salmon, crispy twice-fried skin, and a fresh salad with cucumber, spring onion, avocado, and lemon, all finished with a spicy mayo dressing.

  • mayonnaise (1 spoon)
  • sriracha
  • soy sauce

  • bread rolls (2, halved)

Hoe doe je het

    Dice cucumber and spring onion, place in a metal bowl.

    Heat a frying pan on an induction stovetop and add butter.

    Place salmon fillets skin-side down in the pan with melting butter.

    Add thyme, a small amount of anchovy liquid, and a large piece of garlic to the pan.

    Spoon the hot butter mixture over the salmon fillets.

    Flip the salmon fillets and cook until golden-brown skin.

    Remove salmon from pan and flake into a white bowl.

    Cut bread rolls in half horizontally and toast in the oven.

    Take the cooked salmon skin and fry it again in the pan until crispy.

    Slice avocado.

    Crumble the crispy salmon skin into the metal bowl with cucumber and spring onion.

    Add avocado slices, flaked salmon, and squeeze lemon juice into the bowl.

    Add a spoon of mayonnaise, sriracha, and soy sauce to the bowl.

    Mix all ingredients in the bowl with a fork.

    Spoon the salmon mixture onto the toasted bread roll bottoms.

    Drizzle sesame oil and sprinkle black sesame seeds over the mixture.
